Red Beans and Rice

Ingredients:

  • 1 lb red beans (soaked overnight)
  • 1 smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 4 cups water or broth
  • 1 tsp thyme, 1 bay leaf
  • Cooked white rice

Directions:

  1. Sauté onion, pepper, and garlic.
  2. Add sausage and beans.
  3. Pour in broth and spices.
  4. Simmer 1.5 hrs until beans are creamy.
  5. Serve over rice.
