Ingredients:
- 1 lb red beans (soaked overnight)
- 1 smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 4 cups water or broth
- 1 tsp thyme, 1 bay leaf
- Cooked white rice
Directions:
- Sauté onion, pepper, and garlic.
- Add sausage and beans.
- Pour in broth and spices.
- Simmer 1.5 hrs until beans are creamy.
- Serve over rice.
