Skillet Cornbread

Ingredients:

  • 1 cup cornmeal
  • 1 cup flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • 1 cup buttermilk
  • 2 eggs
  • ¼ cup melted butter

Directions:

  1. Preheat oven to 400°F and grease a cast-iron skillet.
  2. (You can substitute 2 boxes of Jiffy Cornbread, or their Honey option for the cornmeal, flour, baking powder and buttermilk)
  3. Mix dry ingredients. (Do not forget the sugar, this is what gives it that cake taste.)
  4. In another bowl, whisk buttermilk, eggs, and butter.
  5. Combine and pour into skillet.
  6. Bake 20–25 min or until golden.
