Ingredients:
- 1 cup cornmeal
- 1 cup flour
- ¼ cup sugar
- 1 tbsp baking powder
- 1 cup buttermilk
- 2 eggs
- ¼ cup melted butter
Directions:
- Preheat oven to 400°F and grease a cast-iron skillet.
- (You can substitute 2 boxes of Jiffy Cornbread, or their Honey option for the cornmeal, flour, baking powder and buttermilk)
- Mix dry ingredients. (Do not forget the sugar, this is what gives it that cake taste.)
- In another bowl, whisk buttermilk, eggs, and butter.
- Combine and pour into skillet.
- Bake 20–25 min or until golden.
