Candied Yams

Ingredients:

  • 4 medium sweet potatoes, peeled and sliced
  • ½ cup butter
  • 1 cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp vanilla extract
  • 1 bag of mini marshmallow

Directions:

  1. Preheat oven to 375°F.
  2. Layer yams in a baking dish. (baking over boiling seals in every drop of flavor of the yams)
  3. Melt butter; stir in sugar, cinnamon, nutmeg, and vanilla.
  4. Pour mixture over yams; cover with foil.
  5. Bake 30 min, uncover, then bake 15 more with a marshmallow cover until caramelized.
